Black Bean NACHOS


1 Can Black Beans
1 Bag Tortilla Chips
1 Large Green Pepper
1 Large Onion
1 Large Red Pepper

Taco Seasoning Ingredients:

1 Tbsp Chili Powder
1/4 Tsp Garlic Powder
1/4 Tsp Onion Powder
1/4 Tsp Red Pepper Flakes
1/4 Tsp Oregano
1/2 Tsp Paprika
1 1/2 Tsp Cumin
1 Tsp Salt
1 Tsp Pepper
1/2 Cup Water

Cheeze Sauce Ingredients:

1/2 Cup Cashews
2 Tbsp Nutritional Yeast
3 Tbsp Tapioca Starch
1 Tsp Salt
1/2 Medium Onion
1 Tbsp Lemon Juice
1/2 Cup Water


1. Add black beans to a large pan.

2. In a small bowl mix chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper then add spice to the large pan with water then simmer for 10 mins.

3. Spread out 1 bag of tortilla chips on a baking sheet lined with parchment paper.

4. Add black beans, green pepper, onion and red pepper.

5. In a blender combine cashews, onion, nutritional yeast, lemon juice, tapioca starch, salt and water then blend until smooth.

6. Pour cheeze sauce on nachos and cook at 350F for 20mins and then broil until cheese sauce browns.

7. Enjoy!
