Potato SPINACH Soup

Ingredients:

6 Cups Vegetable Broth
1/4 Tsp Red Pepper Flakes
1 Tsp Garlic Powder
1/4 Tsp Nutmeg
1/2 Tsp Mustard Powder
1/2 Tsp Salt
1/2 Tsp Pepper
1 Large Onion
1/2 Cup Water
4 Medium Potatoes
3 Cups Baby Spinach
1 Tbsp Lemon Juice

Method:

1. Simmer onion with water in large pot for 5 mins.

2. Peel potatoes, cut into small chucks and then add to onions.

3. Add baby spinach, lemon juice and vegetable broth to large pot.

4. In a separate bowl mix red pepper flakes, garlic powder, nutmeg, mustard powder, salt and pepper then add to pot.

5. Simmer for 45 mins then use immersion blender to mix until desired consistency.

6. Enjoy!
