Black Bean Sheperds’s Pie


2 Cans Black Beans
1 1/2 Cups Corn
1 Cup Vegetable Broth
1 Tsp Garlic Powder
1 Tsp Paprika
2 Tsp Salt
1 Tsp Pepper
1/4 Cup Almond Milk
1/2 Cup Diced Onion
1/2 Cup Diced Mushrooms
5 Large Potatoes


1. In a large pan mix black beans, onion, mushroom, corn, vegetable broth, garlic powder, paprika, pepper and 1 tsp of salt then simmer for 20mins.

2. Mash until almost all black beans are broken then spread base evenly in a 9×9 dish.

3. Dice 5 large potatoes and boil until soft then mix in almond milk with 1 tsp of salt and mash until smooth.

4. Spread mashed potatoes on top of base, scor with a fork then bake at 400F for 30mins.

6. Enjoy!
