Carrot CAKE Snackers


1/2 Cup Pecans
1/2 Cup Walnuts
1/2 Cup Shredded Coconut
1/4 Cup Dried Currants
1/4 Cup Agave Syrup
2 Tsp Cinnamon
1/2 Tsp Nutmeg
1/2 Tsp Ginger
2 Cups Shredded Carrot


1. Finely grate the carrot. 

2. Process almonds and walnuts in a food processor until ground.

3. Add the rest of the ingredients except for the carrots and process again. 

4. Add the carrots and pulse until well combined.

5. Form the mixture into balls and coat them in shredded coconut.

6. Place the snackers on a plate and refrigerate for 2 hours.

7. Enjoy!
