Cheezy BAKED Potatoes


1 Medium Onion
2 Cups Baby Spinach
2 Cups Mushrooms
3 Large Potatoes

Cheeze Sauce:

1/3 Cup Cashews
2 Tbsp Nutritional Yeast
1 Tbsp Salt
1 Medium Onion
3 Medium Carrots
2 Medium Potatoes
2 Tbsp Garlic
1 Tbsp Lemon Juice
1 Cup Drained Broth


1. To make cheeze sauce add onion, carrots and potatoes to a large pot of boiling water and then boil until soft. Drain while saving the liquid then add to a blender.

2. Add cashews, garlic, nutritional yeast, lemon juice and broth then blend until smooth.

3. Add salt and then blend for 10 more seconds.

4. In a large glass bowl add onion, baby spinach and mushrooms with cheeze sauce.

5. Grease a casserole dish and line the bottom with sliced potatoes approx. 5mm thick.

6. Add layer of cheeze mixture, another layer of potatoes, top off with remaining cheeze mixture then bake at 450F for 1 hour.

7. Enjoy!
